Bakala bath/mosaravalakki/Rice flakes with curds recipe


Bakala bath is good for summer.It will be very tasty if served with curry leaves chutney.It should be served immediately after preparation/Here rice flakes will be mixed with curds.Quantity of curds will be more.Rice flakes absorbs more water.This recipe is very cool in nature.
Required ingredients
Avalakki/poha/rice flakes:2 cups
Curd:3 cups
Salt;to taste
Green chilly:1
Ginger:1 inch size '
Potato:1
Grated cucumber:1/4 cup
Broken red chilly:1
Mustard seeds:1 tsp
Ghee;1 tsp
How to prepare bakala bath
In a serving bowl put curds.Add chopped ginger.green chilly.cooked and mashed potato,grated cucumber and salt.Mix well.Add rice flakes and mix well.Heat ghee in a pan.Add mustard seeds and broken red chilly.When they splutter Pour it over the mix.Serve immediately.

Avalakki /Poha/rice flakes chutney


Avalakki or poha /rice flaks is one of the staple food stuff.In olden days people used to walk miles together after eating one plate avalakki.It is very simple and easy to prepare dish.After adding avalakki it should be served immediately.We can keep ready mixture and add avalakki in required quantity.
Required ingredients
Thin avalakki/rice flakes:2 cups
Red chilly:1
Turmeric powder:a pinch
Coriander seeds:1 tsp
Cumin seeds:1/4tsp
Onion:finely chopped :1
Oil:1 tsp
Grated coconut:1/2 cup
Salt;to taste
How to prepare avalakki chutney
In a small pan fry red chilly,coriander seeds and cumin seeds by adding oil.
grind them with grated coconut and turmeric powder to form smooth paste with out adding water.transfer it to mixing bowl.Add salt and chopped onions and mix well.Add avalakki and mix well.Serve immediately.

Cucumber sweet dosa recipe

We knowcucumber dosa  preparation.Cucumber is rich in Vitamin A,B and C which boost energy and water in the cucumber helps you to keep cool,hydrated.Also rich in minerals like magnesium.potassium.It also helps in weight reduction,expelling kidney stones and other toxins and for some extent it is use ful in cancer.Externally it soothes the skin if applied.
This sweet dosa will  definitely be liked by children.No side dish is required for this dosa.If you want you can have it with chutney or sambar of your choice.
Cucumber sweet dosa
Required ingredients
Grated cucumber:1 cup
Rice;1 cup
Salt:to taste
Grated coconut:4 tsp
Jaggery;8 tsp or to taste
Gghee:4 tsp
How to prepare cucumber sweet dosa
Wash and  soak rice for2-3 hours
Grate cucumber and grind rice with 1/2 cup of grated cucumber,coconut and jaggery to form smooth paste.No need of adding water.Jaggery and cucumber will help to make it thin.
Add remaining cucumber to the batter.Add salt.Mix well
Heat tava on low medium flame.Apply little oil to tava.Take one ladle full of batter and pour it over the and spread it in to circle by the back side of spoon.

Home remedies for dark circle


Dark discolouration of skin  under eye is called dark circle.Stress,lack of sleep,hereditary factor,Dry skin,improper food habit are the main reasons for dark circles.many creams and lotions are available in the market to reduce dark circles.here are few home remedies to reduce dark circles.
Home Remedies

  1. Drink Plenty of water atleast2-3 litres /day.
  2. Avoid smoking,caffeinated drinks and junk food stuffs.
  3. Drink fresh fruit juices,vegetable juices like carrot juice,cucumber juice,banana stem juice,tender coconut water.
  4. Sleep 6-8 hours /day
  5. Avoid stress by practising Yoga,Pranayama and Meditation.
  6. Cucumber is a good astringent,skin toner and gives soothing effect to eyes.Extract fresh cucumber juice and apply it over the affected area by dipping cotton balls in it.Or keep thick cu umber pieces,cut cucumber in to thick circles and keep them over the eyes for 15-20 minutes.Wash with cold water.
  7. Apply fresh cream under eyes or Mix cream with turmeric powder and apply .Keep it over night.It reduces the dryness of skin.
  8. Like cucumber potato also helps in treating dark circles.Grate potatoes and make paste of it.Apply it over affected area.OR cut potatoes into circles and keep it over eyes for 10 minutes.Wash with cold water.natural bleaching agents in the potato helps to relieve dark circles.
  9. Tomato juice mixed with equal quantity of lemon juice can be applied over dark circles or 
  10. Tomato juice can be mixed with mint paste and applied over the affected area.Wash with cold water.Tomato has skin lightening property.
  11. Cotton balls dipped in rose water effectively cures dark circles.Keep cotton balls dipped in rose water over the affected eye for 15 minutes.It gives soothing effect to eyes and helps to reduce dark circles.
  12.  Almond oil helps to rejuvenate the skin around eye balls.Gently massage the skin around eye balls with few drops of almond oil.It will lighter the dark circle and reduce dryness of skin.
  13. Keeping cold tea bags over the affected eye for few minutes helps in relieving dark circles.
  14. Make thick paste of turmeric powder and pineapple juice.Apply it under eyes with the help of cotton ball.Wash after 15 minutes.Turmeric has anti oxidant and anti inflammatory property.That helps in reducing dark circle.
  15. Apple has tanic acid which helps to lighten the skin colour.Cut apple in to thick circles and keep it over the affected eye.Wash with cold water.
  16. Make paste of gram flour, tomato juice, turmeric powder and apply it oer the dark circles.Wash after 15 minutes.

Ridge gourd peel (Heere sippe)chutney recipe


Luffa anguiculata is the latin name of ridge gourd.Hire kayi is theKannada name.Ridge gourd is low in saturated fat and cholesterol, high in dietary fibre, vitamin C, riboflavin, zinc, thiamin, iron, magnesium and manganese.It has blood-purifying properties.It contains insulin-like peptides, alkaloids and charantin, all of which act together to lower blood and urine sugar levels without increasing blood insulin levels.It has high beta carotene that is good for eyes.Cellulose in ridge gourd helps to overcome constipation so is good for stomach.It helps to purify, restore and nourish liver as its an antidote for alcohol intoxication, also aids weight lose.It is used in skin care treatment against eczema, psoriasis, aids in curing piles.
usually people use the inner pulp portion of ridge gourd and discard the peel.We can prepare tambuli and chutney from it.Ridge gourd peel tambuli(heereridge-gourd-peel-sippe-tambuli.html) we 've tried earlier.Today we will discuss chutney.This chutney suits best with rice,dosa,chapati,idly,roti etc.
Required ingredients
Ridge gourd peel:1 cup
Heere sippe chutney
Salt:to taste
Tamarind;a pinch
Grated coconut:1 cup
Coriander seeds;1 tsp
Black gram dal:1 tsp
Red chilly:2
For tempering oil,mustard seeds:1 tsp
Broke red chilly
Curry leaves
How to to prepare ridge gourd peel chutney
Wash and gently remove the skin portion from the ridges of ridge gourd and and make them small pieces.
Cook them by adding little water ,salt and tamarind.
Fry coriander seeds,black gram dal and red chilly by adding little oil.
When cooked peel becomes cool,grind it with fried masala and coconut in to smooth paste.Add water if required.Adjust salt.
Heat oil in a pan.Add mustard seeds,red chilly and curry leaves.When they start spluttering pour it over chutney.

Padmasana

'Padma' means lotus in Sanskrit language.This asana  resembles lotus.It is one among sitting series of asana.It is mainly for meditation and pranayama practise.In the beginning you may feel difficulty in sitting padmasa for few minutes,but after practise one can sit in padmasana for hours together.
How to practise Padmasana
For any asana practise stomach should be empty.Early morning is preferable.Other wise 3-4 hours after food one can practise.
Room should be well ventilated.Put a mat or bed sheet over clean even floor.
Sit o the mat by spreading the legs forward.
Keep your left foot on right thigh and right foot on left thigh.Place the hands on knee joint. or do Chinmudra.
One has to observe his nose tip.

Kesaribath recipe



FRESH KESARI BATH
Kesari bath is one of the famous sweet prepared by using kesar or saffron.Usually it is prepared by using semolina or rawa.It is a good combination with upma.But kesari bath is also prepared by using rice.Some people add pine apple while preparing Kesari bath.That improves the taste of your sweet.Even with out  pine apple also you can prepare kesari bath.Always use organic sugar for preparing this.Use pure and fresh ghee.Some people add  artificial colour instead of kesar.That is kesari bath with out kesar.This is a rich food with main four ingredients ghee,semolina,sugar and kesar.It is very easy to prepare.Use exactly mentioned amount of ingredients and you will get good kesari bath.Some people add very less amount of ghee and kesari bath is like sweet upma.
Required ingredients
Semolina/Rawa(medium or small):1 cup
Organic sugar:2 cups
Ghee:1 cup
Kesar/ saffron:5-6
Milk:4 tsp
Pine apple:1/2 cup
Cardamom powder:1 tsp
Raisins ,cashews
How to prepare kesari bath
Soak kesar in milk.In a thick bottomed pan fry semolina in low flame by adding 2 tsp of ghee till you get good aroma.Keep it aside.
Take 2-21/2 cups of water in a thick pan and allow it to boil.Add finely chopped pine apple and fried semolina.Close the lid.When the water evaporates both will be get cooked.
Now add sugar,milk with kesar and stirr continuously with out leaving hand.Add ghee when ever required.
Add cardamom powder,raisins,cashews.Stirring should be continued till it becomes a mass and starts separating from the sides of pan.
Put off the fire .Transfer to serving bowl.

How to lose belly fat naturally


One saying '''longer the belt,shorter will be life span''.It clearly indicates that as fat starts depositing  in  your belly,it is time to work out,other wise danger ahead.With belly fat it looks miserable and brings many health problems with it.Usually when our  daily calorie intake is more than the calorie required for our body,it starts depositing in liver in the form of glycogen and then it turns to fat.Common reasons for belly fat are over eating,sedentary life style,lack of exercise.this may lead to many serious health problems like arthritis,heart diseases,diabetes etc.
There are two main steps to reduce belly fat.One is to reduce the number of calorie intake,and another is increase the number of calorie we burn through physical activity.

Step one:reduce the number of calorie intake

  • Drink 2-3 litres of water/day.Take 1-2 cups of water in early morning in empty stomach.
  • Drink one glass of honey water with lemon one hour before break fast.
  • Eat healthy.Take fresh fruits and vegetables,salads,fresh fruit juices.Always try to avoid junk food.These junk foods are high in fat,sodium and sugar.they does not contain any nutrients our body needs to stay healthy.this fat in the junk food starts accumulates in our body and you will get fat belly.
  • Eat less carbohydrates.They require for instant energy.If you take excess carbohydrate t will be converted in to fat and deposits in your belly.
  • Eat more protein diet.Body burns more energy processing proteins than it does processing fat and carbohydrates.
  • Stop taking alcohol.Alcohol drinkers especially beer takers always have belly fat.That gives stress to liver to clear the toxins.Instead of alcohol one can take herbal tea,green tea,fresh fruit juice,tender coconut water.
  • Take oil free food stuffs
  • To follow diet you can reffer diet-to-reduce-over-weight.

Step two:increase the number of calorie we burn through physical activity.

  1. To burn the excess calorie daily one hour brisk walk is good.

Puttu recipe

Fresh puttu

Puttu is one of the famous breakfast dish of Kerala.It is a steam cooked dish.It is cooked in a special cylindrical container called puttu maker.It can also be prepared with idly mould.Here fried rice powder will be mixed with water and filled in the cylinder and coconut gratings.Puttu powder is available in the market or you can prepare it by frying rice powder.It is staple food.It is served with banana or with sambar(Kadala curry).
Required ingredients
Puttu powder:1 cup
Grated coconut:4 tsp
Salt:to taste
How to prepare puttu
Take puttu powder in a bowl.Slowly add salted water to it so that it should become bread crumbles.Keep it for five minutes.Again add little salt water if required.It absorbs more water.Take one fist full of powder and fill it in puttu maker.Add one spoon of coconut gratings.again repeat this till puttu maker is full.Steam cook for  five minutes.
Push the puttu from back side of cylinder with the help of stick Which is available along with puttu maker.
Puttu is ready.Serve with sambar and banana

Home remedies for acne/pimples


Pimples are an inflammation of the skin in which the sebaceous glands (oil glands) become infected with bacteria, swell up, and fill with pus. Excess sebum secretion by the oil glands is the primary cause behind this problem. Pimples generally occur on the face, neck, back and shoulders.They affects the teenagers most and though not critical, it makes the social life of a teenager miserable due to its appearance.  The scientific name for pimple is Acne vulgaris. Sebum that is produced by the sebaceous glad keeps the skin and the hair on it moist. Excessive sebum secretion by the sebaceous glands during the adolescence is the main reason for pimple eruptions.

A lot of chemicals and medicines are available in the market for the cure of pimples but one can treat the pimples naturally and thus help it cure without any side effects.Some of the tips to follow to avoid acne/pimples are

  • Drink plenty of water,at least 2-3 liters/day
  • Avoid junk food,oily food stuffs and replace them with fresh vegetables,salads,fruits and fruit juices.
  • Certain vitamins like Vitamin A when taken in combination of Niacin works wonders in curing pimples. Leafy vegetable like the spinach, broccoli, asparagus are excellent source of such vitamin and niacin.
  • Wash face on and often at least 5-6 times/day with clean water.
  • Instead of soap or face wash use gram flour or green gram flour mixed with water to wash your face.
  • Do regular yogasana,pranayama to keep your mind relaxed.


 Some of the natural home remedies for the treatment and cure of pimples are as follows


  1. paste made of clove with water is applied over the affected area.Rinse after 15 minutes gives good result.It dries the pimples.
  2. A combination of lemon juice and rose water when applied on the pimples and left for half an hour is a good remedy for pimples. This should be continued for three to four weeks as a natural home remedy. To come out of pimples or acne, add few drops of lemon juice to 2 tsp of rosewater and apply it evenly on the acne affected. While lemon juice acts as best astringent, rosewater will be working as a calmative which repairs your skin from inside.
  3. Use of lemon juice, which is rich in vitamin C. Lemon juice helps pimples dry up faster. Be sure to use fresh lemon juice and not bottled juice .Dip a clean cotton swab in fresh lemon juice and apply it to the pimples before going to bed.(don't go out in sunlight with lemon juice on face).
  4. Lemon juice when mixed with ground nut oil and then applied on the affected surface is a very good remedy for pimples. Sandal wood powder can also be added for added benefit. 
  5. Cinnamon power mixed with lemon juice also works wonders.
  6. Honey is a source of natural antibiotics that can speed up the healing process, as well as help prevent infections.Dip and clean cotton swab in honey, put it directly on the affected area and leave it on for half an hour.Wash the skin well with lukewarm water.
  7. A combination of honey and cinnamon powder is a natural home remedy. When this paste is applied on the pimples and left over night it cures pimples. The process however should be continued for a couple of weeks.
  8. Mustard powder with honey is also one of the natural remedy for pimples.Apply paste of mustard powder and honey over affected area and keep it for 15 minutes.Wash  with warm water to get glowing skin.
  9. A mask prepared by combining grated apple pulp and honey also is a natural home remedy for curing pimples.It makes you feel extremely refreshed and acne-free. Make sure that you repeat this remedy for couple of times to see results. You can directly apply on the pimples or can also apply for whole face. 
  10. Garlic is an antiviral, anti fungal, antiseptic and antioxidant agent that can help in the fast treatment of pimples. The sulphur and allicin in garlic also promotes quick healing of pimples.`
  11.  The cucumber pulp also does the same act of curing pimples in a natural way.
  12. Juice of raw papaya when applied on the pimples cures it naturally and without any side effects.Papaya fruit has a number of properties that help in the treatment of pimples. It is a good source of the antioxidant vitamin A, and it has enzymes that help reduce inflammation and make your skin soft and smooth. In addition, the exfoliating capability present in papaya will remove dead skin cells and help clear clogged pores. It is simple to use,just crush raw papaya pieces to extract its juice and apply it over the pimples.
  13. Fresh mint leaves offer pimple-free skin to you.A very common herb is the mint. Applying freshly extracted juice of mint leaves on the pimples is a natural home remedy.Take few fresh leaves of mint and squeeze juice by rubbing them. Now, apply the squeezed juice on the acne and leave on for 10 minutes. Do it in regular intervals of time .
  14.  A mixture of juice of coriander leaves and turmeric is a natural home remedy for curing pimples.
  15. Two or three Basil leaves should be boiled in water for fifteen to twenty minutes. The decoction when cooled and applied on the infected surface cures the pimples fast and naturally. This is also a natural home remedy. This should be done on a regular basis for quick relief and cure.
  16. A paste of neem leaves and turmeric in water base when applied on the pimples and is left for half and hour heals pimples fast and effectively. 
  17. Lime juice added to roasted and then powdered peels of the pomegranate fruit and then made into a paste in water base and applied on the pimples will heal the pimples in no time.
  18. Crushed fenugreek seed made into a paste by adding water and then applied on the pimples overnight is a very good natural remedy against pimples.
  19. Nutmeg powder added to raw milk and the  paste when applied on the pimples for about a couple of hours is a very good natural remedy to cure pimples. This is more effective with individuals with dry skin problems.
  20. Aloe Vera the wonder remedy  is a good natural remedy. Apply the pulp of the leaves directly on the surface of the pimples. It is anti bacterial and prevents inflammation.
  21. Tea tree oil is a natural home remedy to cure pimples.
  22. Wheat germ oil and marigold paste are also natural home remedies against pimples.
  23. A face pack made of mud especially ant hill mud, rose water or just plain water is a very effective and natural cure for pimples. It absorbs excess oil from the surface of the skin leaving it healthy and bacteria free.Apply paste  of mud on the affected area of your face and leave it until it dries completely. Once it is dried out totally, rinse it with cold water and you will be really stunning to watch clear beautiful skin on your face.
  24. A mixture made with oatmeal and honey is very effective for the treatment and cure of pimples.
  25. Cucumber is a rich source of potassium and vitamins such as A, C and E. It also has a cooling and soothing effect on the skin.Cut one or two fresh cucumbers into pieces and soak them in water for about an hour. The nutrients, such as vitamin A, potassium and chlorophyll will transfer to the water. Strain the water and drink it, or use the water to wash your face.
  26. Dark acne spots and dark circles can be easily lightened by applying fresh cucumber juice. Squeeze fresh juice and apply it on the face with a cotton ball or light cotton cloth. Make it dry for 20 minutes and wash off. 
  27. You can also make a face mask by grinding one cucumber. Apply the mask on your face and allow it to dry for 15 minutes. Wash your skin with warm water. This will help clean dirt and bacteria from your pores.
  28. Grapes do make a wonderful cleaning to your skin as it is rich in poly phenols and antioxidants. It fights with the pollutants and other ageing factors to keep your skin young and lively.
  29. Turmeric is one such wonderful ingredient which stops the excess melanin production in skin. It is anti-bacterial and suits perfectly for all types of skin. Whether it is lemon facial pack or honey facial pack or any other homemade facial pack, you can undoubtedly mix turmeric to that facial pack to get more results. Curd, milk, honey, lemon, oatmeal, and many other ingredients works best with the proper mix of turmeric.
  30. Carrot mask is absolutely rich in powerful antioxidants as it is filled with Carotenoids, essential oils, and many other vitamins that are extremely helpful for your skin condition. Regular intake of carrot juice will definitely improve your skin condition by reducing skin pigmentation and supplying enough nutrients like potassium, calcium to the skin.
  31.   Potato is natural bleach to your skin.Potatoes do contain natural bleaching properties which makes your blemishes minimised and whitened. Apply potato paste or juice to the blemishes or all over face and let it dry for 10 minutes. Wash off with lukewarm water and see the improvisation in your skin complexion. The starch and vitamin C in potatoes are responsible for this wonderful effect.
  32.  Sandalwood Powder gives you exclusive results in treating acne.Make sure the sandalwood powder that you are using in this tip is pure. Take the ingredients of tomato juice, lemon juice and cucumber pulp and then add them to sandalwood powder to make a  paste .  your face complexion  will improve by applying this paste regularly.
  33.  Mix neem powder with enough water to get a smooth thick paste. Now, apply this thick paste on the pimples and leave it over-night. Wash off in the morning .
  34.  Fenugreek leaves paste can wash away your pimples.Make a fine thick paste of fenugreek leaves and apply it on your face for 20 minutes. 
  35. Powder the black gram dal and mix in proper proportions with sandal wood powder. Now put this paste on your face in the night and clean it in the morning with cold water.
  36. Simple ice Treats acne and acne scars.Just massage the affected area with ice cube.It helps to reduce inflammation. 
  37. The seeds of date do well in treating acne. Make paste of vinegar and date seeds and apply it over pimples.Wash after 20 minutes.
  38.  Paste of Cumin (jira) seeds also relives you from acne.Cumin seeds must be crushed into fine powder and should be mixed with water to form a smooth paste. When this paste applied on the acne reacts excellently in treating acne.
  39. Saffron with excellent combination ingredients like red sandalwood.This  paste soothes the skin and gives your skin a lovely clear look. 
  40. Take 1 spoon of gooseberry fruit powder with water daily. 
  41. Cut tomato into two pieces and squeeze juice from it. Now, add some curd and turmeric to the tomato juice and apply all over the face. Make it dry for 20 minutes and wash with cold water. 
  42.  Cabbage water clears acne scars.Boil cabbage leaves in water for 20 minutes and collect the remaining water in a bowl. Make it cool and then wash your face with that cabbage boiled water. It clears out acne and the scars too.
  43. .Rice flour also clears dirt from your skin pores and gives you a bright clear look. Add some water or milk to the rice flour and make a paste. Apply this flour paste all over the face and allow it to dry for more than 30 minutes. After that, wash your face with lukewarm water .and then give a final wash with cold water.
  44. Pineapple puree is one  which is giving top results in clearing all acne marks from your skin. Take some fresh puree of pineapple fruit and apply it all over the face as mask. After it becomes dry, make sure that you rinse off with cold water.
  45. Carrot pulp with pure honey and lemon helps to increase the complexion.Carrot is rich in vitamin A and all the anti-oxidants that help in giving a healthy look to your skin. Take some fresh carrot paste and mix it with little amounts of honey and lemon juice. Mix it well for 5 minutes and then massage your face with this paste. Do this for 10 minutes and wash it after 30 minutes. 
  46. Banana fruit and peel gives stunning result in acne.Take well ripened banana and make paste.Apply it to the affected area or full face.Wash after 20 minutes.Repeat this procedure till you get result.With banana peel also you get the same result.Just rub banana peel on face or affected area and wash after 15 minutes.
  47. Coconut water.Wash your face with coconut water.It clears your skin by fading scars.If you have excess coconut water(not tender) boil them on low flame till it becomes the consistency of cream.Apply this cream daily to your face.It reduces pimples slowly improves the complexion.
  48. Take facial steam on alternate day followed by splashing with cold water.Steam helps to open the pores.
  49. Freeze strong green tea in to ice cubes.Rub over pimples for few minutes.It decreases inflammation and acts as anti microbial.
  50. Just apply diluted apple cider vinegar over pimples.It dries pimples immediately.   
  51. Last but not least just put toothpaste on the pimples in the night and go to sleep. If you repeat it regularly, you can witness the impressive results just within 2 or 3 days.Have a beautiful pimple free face naturally!!!!

Bende kai kayi rasa(Ladies finger sambar-South Indian style)recipe

Ladies finger or bendekai is a very good vegetable.We can prepare many preparations with it.Sambar is also prepared in many ways.One of the popular preparation of Coastal Karnataka is kayi rasa.Here kayi means coconut.Here almost all dishes are prepared by using coconut.This is a nice side dish for rice.Also can be used for dosa,chapati,roti etc.While preparing ladies finger dishes we use tamarind to over come its sliminess.
Required ingredients
Ladies finger:1/2 kg
Salt:to taste
Jaggery:to taste
Tamarind:size of grape
Grated coconut:1 cup
Red chilly:2
Black gram dal:2 tsp
Oil:3 tsp
Mustard seeds:1tsp
Broken red chilly:1
Coriander leaves
How to prepare kayirasa
Wash and cut ladies fine into 3/4 inch size pieces
Soak tamarind in water.squeeze and extract the juice.In a vessel boil tamarind juice,salt and jaggery.You can add extra water.When it starts boiling add chopped ladies finger and cook it.
In a pan fry red chilly and black gram dal by adding little oil till they become crispy and dal turns golden colour.
Grind them with grated coconut by adding sufficient water to form smooth paste.
Add this mix to cooked vegetable.Add water if required ,so that it should have the consistency of sambar.
Adjust salt,boil it.
Heat oil in a pan.Add mustard seeds,broken red chilly.When they splutter add curry leaves and pour it over  sambar.Kayi rasa is ready to serve.

Plain rasam recipe(bele saaru)

This plain rasam is a good combination with rice.Here thoor dal is the main ingredient.To subside its gaseous effect we are adding ginger.This tastes very good even healthy too.
Required ingredients
Thoor dal:1 cup
Green chilly:1
Ginnger:1 inch size
Salt:to taste
Jaggery(optional):to taste

Turmeric powder:a pinch

How to prepare bele saaru
Cook thoor dal by adding sufficient water.
Add salt,jaggery,tamarind,slit green chilly,crushed ginger and turmeric powder and boil it.If you are adding lemon juice instead of tamarind add it at the end of preparation.don't boil after adding lemon juice.
heat ghee in apan,add mustard seeds.broken red chilly.When they splutter add curry leaves and pour over rasam.

Balemoothi/kundige/pumbe(banana flower)palya

Banana flower is called as pumbe/balemoothi/kundige in Kannada.This is the rich source of fibre.We have already discussed regarding chutney,tambuli preparation by using banana flower.Hope you have liked it.Today we are going to prepare palya or dry fry.It is a very tasty side dish for rice ,dosa,chapati.We have to remove the outer one or two layers.Then we have to chop it very small and put it in water .Some people add fried boiled rice to increase the taste.Even with out this also this palya will be very tasty.

Required ingredients
Finely chopped banana flower:2 cups
Salt:to taste
Jaggery;to taste
Grated coconut:4 tsp
Fried boiled rice;1 cup
Oil:3 tsp
Mustard seeds:1 tsp
Broken red chilly;1
Black gram dal:1 tsp
How to prepare Balemoothi/kundige/pumbe(banana flower)palya
Remove the outer 2-3 layers of banana flower.Finely chop and put them in water.
Heat oil in a pan.Add mustard seeds,black gram dal,broken red chilly.When they splutter add chopped banana flower.Add salt and jaggery.Add very little water.Close the lid. When water content evaporates and grated coconut and put off the fire.
Add fried boiled rice and serve.

Palak dosa recipe

We know palak by palak paneer.We can prepare a healthy ,tasty dosa with palak.This dosa also requires no fermentation.This tastes good with coconut chutney.
Required ingredients
Rice:1 cup
Palak leaves:4 bunches
Red chilly:1
Grated coconut:1 cup
Curd:1 cup
Salt;to taste
How to prepare palak dosa
Wash and soak rice for 2-3 hours
Wash and cook palak leaves.(just boiling is enough)
Grind rice,cooked palak,grated coconut,chilly in to smooth paste.Add salt and curd.
Add water if required so that it should have the consistency of dosa batter.
Heat tava on medium flame.Take one ladle full of batter and pour it over tava and spread it into thin circle by the back side of spoon.
Close the lid.Cook on both sides.Serve hot.

Un ripened banana (bale kayi)dosa recipe

We have discussed regardingbanana dosa .This balekayi dosa or unripened banana dosa will be crispy and sweet.here fermentation is not required.We can make it papery thin.It tastes good when served with chutney.This also makes a nice breakfast.
Required ingredients
Rice:1 cup
Unripened banana:4
Grated coconut:1/4 cup
Salt:to taste
How to prepare balekayi dosa
Wash and soak rice for 2-3 hours.
just remove the outer fibrous portion of banana(don't  remove the peel) carefully and cut them in to small cubes and soak in water for 10 minutes.
Grind rice,grated coconut,banana cubes in to smooth paste by adding sufficient water.Transfer in to a bowl.Add salt.
Take one ladle full of batter and pour it over pre heated tava.Spread it in to thin circle by using backside of spoon.Close the lid.Cook both sides.Serve hot.

 Instant wheat dosa is prepared by  using wheat flour.I've explained Whole wheat dosa/roti .This will not taste like whole wheat.But this dosa is delicious and easy to prepare.here also no fermentation required.It can be served with chutney or sambar or any side dish of your choice.This will make a nice breakfast or evening snack.

Wheat flour:1 cup
Salt:to taste
 Ghee
 Oil
How to prepare instant wheat dosa
Take wheat flour in a vessel.Add salt.
Slowly add water and make smooth paste.
Add more water so that the mixture should have the thickness of dosa batter.
Heat tava on medium flame.Apply little oil to the tava.
Take one ladle full of batter,pour it over the tava and spread it in to thin circle with the help of back side of spoon. Close the lid and allow to cook for few seconds. Open the lid,put little ghee over it,flip the dosa and cook the other side. Serve hot.

Cooked rice:1 cup
Rice flour:2 cups
Salt:to taste
How to prepare rice roti
Mash or grind cooked rice to form smooth paste.(If you are grinding in mixie should not add water)
Add salt. slowly add rice flour and mix well till you get the consistency of chapathi dough.
Make small lemon sized balls out of it.
Now flatten them in to thin circles by using your fingers or with the help of chapati roller.
Cook on one side over pre heated tava and other side on direct fire.It will puff like pulkha.If it is not puffing also roti will be soft.

Fenugreek (menthe idly) pudding recipe


Those who like pudding(idly) but avoid dal because of gas formation can have this fenugreek idly.Fenugreek is good for diabetes patients.It is cooling in nature.Improves breast milk.This idly will be soft like ordinary idly ,but will have the unique smell of fenugreek.As it is steam cooked no oil usage.It can be served with chutney or sambar.
Required ingredients
White rice:2 cups
Boiled rice:1 cup
Fenugreek seeds:1/4 cup
Salt;to taste.
How to prepare fenugreek idly
Wash and soak rice and fenugreek separately for 5-6 hours.(Soak them in boiling hot water to get soft idly)
Grind fenugreek in to smooth paste.
Grind rice in to coarse paste and add to fenugreek paste and mix well.Add salt.Keep for fermentation for6-8 hours.
Pour in to idly container and steam cook for 30-45 minutes.
Serve hot with chutney or sambar.

Dal-a side dish for chapati/roti recipe


Dal is protein rich food.For chapati and roti we can easily prepare this healthy ,delicious side dish with minimum time.We can use thoor dal or green gram dal for this.
Required ingredients
Thoor dal/green gram dal:1 cup
Onion:1 Chopped)
Green chilly:1
Ginger:1 inch size(finely chopped)
Cinnamon:1 inch
Clove;4-5
Cardamom:1 clove
Salt to taste
Coriander leaves
Dates(fresh):5-8(finely chopped)
Ghee:2 tsp
How to prepare dal
Wash and cook dal till they become very soft.(we can use pressure cooker)
Heat ghee in a pan.Add cinnamon,clove and cardamom.When they become warm add chopped onions and green chilly and fry them till onions turn transparent.
Add mashed dal,chopped ginger.Add water if required.
Add salt and boil it for 2-3 minutes.
Garnish with coriander leaves and chopped dates.

Banana pudding(Bale hannu idly) recipe


Banana pudding is one of the healthy recipe.It is very tasty.Those who want to have idly but don't like fermentation can try this.It is steam cooked ,so no oil  is used here.With all goodness of banana this will be soft,sweet and tasty makes your breakfast wonderful.You can fold the batter in banana leaves or you can prepare it by using idly container.With minimum ingredients you will have a very delicious breakfast.You can just serve it with ghee or chutney or sambar.
Required ingredients
Banana idly
Ripened banana:8-10
Rice:1 cup
Salt:to taste
How to prepare banana pudding
Wash and soak rice for 2-3 hours
Peel the banana and mash them or grind to form smooth paste.
Grind the rice in to coarse paste and add it to banana paste.
Add salt.Mix well.No need of fermentation.Pour them to idly container or softened banana leaf and fold from four sides.
Steam cook for 30 minutes.Serve hot with ghee ,chutney or sambar.

Hesaru bele payasa

Hesaru bele is the Kannada name for greengram dal.Payasa prepared with this dal is one of the favourite of my husband and little kids.Usually we use coconut milk for this.But in some part of South Karnataka only Jaggery is used with dal and this payasa is called as 'Seevu' means sweet.Channa dal and green gram dal payasa are the common payasa prepared for functions in our area.After eating payasa the left out  at the end will be boiled and preseved for the next day and it will be like laddu.Hesaru bele payasa is very tasty,so try this at home.
Required ingredients
Greeen gram dal:1 cup
Grated fresh coconut:1
Jaggery:21/2 cup
Cardamom powder:1 tsp
 How to preparre hesaru bele payasa
In a thick bottomed pan fry green gram dal tillit becomes golden colour and you get good aroma.
Wash and cook them till they become soft.(you can use pressure cooker also)
Grind grated coconut with sufficient water to form smooth paste.Filter it through a clean cloth and extract thick coconut milk.
Again add little water to that coconut and squeeze the thin coconut milk.
Add thin coconut milk to the cooked dal,add jaggery and boil it with continuous stirring to prevent sticking.
Once the jaggery dissolves completely ,Add thick coconut milk and cardamom powder.
When it starts boiling put off he fire.

Control high blood pressure with garlic milk

As blood circulates through the body,it exerts varying degrees of force on artery walls and is called blood pressure.In its early stage ,high blood pressure is symptom less,so many people don't realise that they have  a potentially life threatening disease.If the condition goes unchanged high blood pressure  damages the heart and blood vessels and can lead to a stroke,heart attack and other serious consequences.Once high blood pressure is diagnosed you should be under medical observation.Along with that one can try this garlic milk.This will have all the good qualities of garlic with less pungent taste.
Garlic is called as Allium sativum in Latin,Lasuna or Rasona in Sanskrit language.In Ayurveda the medicinal qualities of garlic has been explained.Garlic though it is explained as tamasa ,it keeps you away from diseases.Because of pungent taste it is difficult to consume.So we can take it in the form of garlic milk.
Garlic has got many minerals and vitamins.100grams of garlic bulb contains-95% Vitamin B6,52% Vitamin  C,33% copper,21% iron,18%calcium,26% selenium,73% manganese.Among these selenium is mineral which keeps heart healthy.Along with these garlic has antioxidants such as Allicin which is a pungent oil releases when we crush garlic.This allicin decreases blood vessel stiffness by release of nitric oxide,there by bring reduction in total blood pressure.It blocks platelet clot formation and has fibrinolytic action  in the blood vessels which helps to decrease the overall risk from C.A.D,P.V.D and stroke.
Required ingredients
Garlic:3-4 cloves
Milk:1 cup
Water:2 cups
Method
Crush garlic cloves and add milk and water.Boil them under low flame.We have to boil until all the water content  evaporates and milk amount should remain.Filter it.Garlic milk is ready.Drink warm.
Precautions while taking garlic milk
Those who are about to under go surgery should not use garlic.(Because it delays clotting)
Very rare people will have allergy to garlic.They should be careful while using garlic milk.

Oggarane Avalakki (Rice flakes upma)

Avalakki or rice flakes is a staple food.It is heavy to digest.It is rich in Vitamin B.many preparations are there by using rice flakes.One should use moderately.In our area it is used for snack.But in some parts of Karnataka  rice flakes used for breakfast.This upma is very simple preparation,even for bachelors it is good,with minimum ingredients and time .Those who want spicy avalakki can increase the number of chilly or can add chilly powder.

Required ingredients
Thin avalakki/rice flakes:3 cups
Grated coconut:1 cup
Onion(chopped):1
Salt:to taste
For tempering:Oil:2 tsp
Mustard seeds:1/2 tsp
Black gram dal:1 tsp
Broken red chilly:1
Coriander seeds:2 tsp
Curry leaves:2 twigs
How to prepare Oggarane avalakki
Mix salt with grated coconut.Mix rice flakes with that.
Heat oil in a pan.Add mustard seeds,black gram dal,red chilly and coriander seeds.When they splutter and dal turns golden colour add curry leaves and pour it over the avalakki.
Lastly add chopped onions and mix well.Serve immediately.If you keep for longer time it becomes soft.

Bisibele bath with sprouts recipe

Bisi bele bath is one of the traditional preparation of Karnataka.This the mixture of rice ,dal,vegetables and sprouts with masalas.This is the good combination of carbohydrates ,protein,fibre,fat.It is heavy to digest.So once in a while one can use this.Daily intake is not recommended.No need of any side dish.In some area it is prepared for breakfast and some times for lunch.For picnic  or outings this is best.
Here also like avial we can take any vegetables like ridge gourd,ash gourd,bottle gourd,beans,carrot,ivy gourd etc,and sprouts like Green gram,Channa ,wheat germ,green pea sprouts etc.Here 'bele' means dal,'bath 'meas rice.Bele usually thoor dal is used.Those who don't like thoor dal can use green gram dal.Here rice ,dal and vegetables will be cooked well.So while chopping the vegetables they should be bigger in size.
Required ingredients
Rice: 2 cups
Thoor dal/green gram dal:1 cup
Sprouts:1 cup
Chopped vegetables:1 cup
Channa dal:1 tsp
Black gram dal:1 tsp
Coriander seeds:2 tsp
Cumin seeds:1/2 tsp
Fenugreek:1/4 tsp
Red chilly:2
Cinnamon:1 piece
Clove:4
Khus khus:1 tsp
Mustard seeds:1 tsp
Dry coconut:1/2
Grated fresh coconut:1/2 cup

How to prepare bisibele bath

  • Cook rice,dal,sprouts and vegetables and keep it aside.
  • Fry all the masalas starting from channa dal to khus khus in low flame by adding little oil.
  • Grind them with fresh coconut,tamarind to form smooth paste.
  • Heat oil in a pan.Add mustard seeds.When they splutter add curry leaves,chopped onion and fry till they become transparent.
  • Add cooked vegetables,grated coconut,,masala,cooked sprouts and dal.Add sufficient water,salt and jaggery.
  • Boil with continuous stirring.Add coriander leaves.

  • Close the lid.Mix once in a while till it cooks completely.
  • Add grated coconut,mix well.Serve Hot.

Banana Parata recipe


Banana parata is prepared by mixing wheat flour with mashed banana.This parata will be soft , sweet and rich in fibre.for small kids this parata is best.We can give it to their lunch box.With out any side dish also they will eat.While preparing the dough no need of adding any water.With banana it self we have to prepare the dough.If you have less number of banana or if you don't want more sweet you can reduce the number f banana and add water.You can cook both sides on tava or you can puff like pulka on direct fire.

Required ingredients
Wheat flour:3 cups
Well riped banana;4
Salt:to taste
Ghee
How to prepare banana parata.

  • Mash the bananas of put them in mixie. after removing the peel.Add salt.
  • Slowly add wheat flour and knead,till you get the consistency of chapati dough.It should be soft but should not stick to your fingers.
  • Make small balls of the size of lemon.
  • Roll them in to thin circles with the help of roller.You have toss wheat flour to prevent sticking.
  • Put it over pre heated tava.Cook on both sides or cook on side and put directly over the fire to puff.
  • Banana parata
  • Apply ghee over hot parata.

  • Wash and cook palak with minimum water.After cooling grind grated coconut,cooked palak,salt,tamarind,red chilly and jaggery.
  • In a pressure cooker pan heat oil.Add mustard seeds,blackgram daland broken red chilly.When they splutter add curry leaves andchopped onionsAnd fry for a minute.
  • Now add palak paste,Add washed rice and fry for two minutes.
  • Add 4 cups of waterand close the lid.
  • Pressure cook for 2 signals.
  • Open the lid when the pressure releases its own.Mix well,Serve hot.

Green gram sprout(hesaru molake) upma

First we will discuss regarding the qualities of sprouted green gram.Sprouts are rich source of protein.They contain Vitamin A,B1,B2,starch,potassium,calcium,,nitrogen,iron,niacin,Vitamin C.We can use these sprouts raw it self in salads etc.Those who cannot able to digest raw can prepare this delicious upma. Even for bachelors this will make a nice breakfast with minimum ingredients . Toget green gram sprouts we have to soak green gram in cold water for 6-8 hours.Always select organically grown green gram.Once you soak in water it will expand it size four times by absorbing water.If you soak in the morning evening or at night drain the water.But it should be wet.
Next morning you will get sprouts.Some people suggest to hang the gram  tied in a  cloth.By doing so you will get good sprouts.But for green gram just draining water after soaking is enough to get good sprouts.This upma can be used as snack or breakfast or a side dish with rice,chapati or dosa,roti etc.Any form if you take it is good especially for growing children,pregnant ladies.

Green gram sprouts: 1 cup
Salt:to taste
Jaggery(optional):to taste

  • Fist cook green gram sprouts in pressure cooker or directly.While cookig don't add salt or jaggery,because if you add salt cooking will be delayed.
  • Heat oil in a pan,add mustard seeds.blackgramdal,broken red chilly.

South Indian side dish Avial recipe

Avial is one of the famous side dish of Coastal Karnataka and some parts of Kerala.This suits best with rice.But we can use it with chapati ,roti,dosa etc.In this we can use all vegetables.It resembles like majjige huli or melara.It will be more thick than the usual sambar or melara.It is highly nutritious because it contains the goodness of all vegetables and rich in fibre.In this we have cut the vegetables lengthwise,1/4 inch width and 2-21/2 inch long.We can use any vegetable like drumstick,bitter gourd,carrot,,beans,ridgegourd,bottlegourd ,pumpkin,brinjol etc.
These vegetables will be mixed with coconut gravy.
Required ingredients
Chopped vegetables:4-5 cups
Green peas:1/2 cup
Salt:to taste
Grated coconut:1 cup
Cumin seeds;1 tsp
Green chilly:1
Turmeric powder: a pinch
Butter milk:1 cup
For tempering:oil:1 tsp
              Mustard seeds
              Broken red chilly
              Curry leaves

  • Cook all the vegetables and green peas by adding salt.
  • Grind grated coconut with turmeric powder,cumin seeds and green chilly to form smooth paste by adding sufficient water.
  • Add butter milk to the cooked vegetable and boil it.
  • When it starts boiling add coconut mix.Add water if required.It should be thicker than the usual sambar.
  • Boil for one minute and put off the fire.
  • Heat oil in a pan.Add mustard seeds and broken red chilly.When they splutter add curry leaves and pour it over avial.

Rice noodles upma(shyavige oggarane) recipe

I have explained the preparation of South Indian Rice noodles.We can prepare a very delicious upma by using this noodles.those who don't like plain noodles they can have this upma.This is very easy preparation.If you have excess noodles then you can try this.

Required ingredients

Rice noodles:3
Onions(finely chopped):2
Grated coconut:1/4 cup
Oil;2 tsp
Mustard seeds;1/2 tsp
black gram dal:2 tsp
Broken red chilly:1
Ground nuts:4 tsp
Curry leaves:2 twigs
Salt:pinch

  • Cut the noodles in to small pieces.
  • Heat oil in a pan.Add mustard seeds,black gram dal,red chilly,ground nuts.
  • When they splutter add curry leaves ,chopped onions and fry them till they become transparent.

  • Add little salt to grated coconut and add it to the noodles.
  • When it becomes hot put off the fire and serve hot.

Rawa(semolina) idly recipe


Rawa idly is also one of the famous south Indian break fast.It can be prepared in two methods.In one method black gram dal is used for fermentation.Instead of rice rawa is used.In this method fermentation is required for 8-12 hours.In another method curd is used and no need of fermentation.According to our convinience we can try these.

Type  one

Required ingredients
Small rawa(semolina):2 cups
Black gram dal:1 cup
Salt:to taste
Method
  • Wash and soak black gram dal for 2-3hours
  • Grind it to form smooth paste by adding sufficient water.
  • Fry rawa(semolina) in a thick bottomed pan.Add it to the black gram dal batter when it is warm it self.
  • Add water if required.Add salt,mix well.
  • Keep it for fermentation.
  • After fermentation pour it to idly container and steam cook for 20-30 minutes.
  • Serve with chutney or sambar.

Type two


Required ingredients
Rawa(small):2 cups
Curd:31/2 cup
Grated coconut:1  cup
Grated carrot:1
Ginger(chopped):1inch size
Coriander leaves
Salt:to taste
Method

  • In a thick bottomed pan fry rawa till you get good aroma.
  • Transfer it to a big vessel.Add chopped ginger,coriander leaves,grated carrot,coconut salt and curds.Mix well.
  • No need of keeping for fermentation.
  • Pour to idly container and steam cook for 20-30 minutes.
  • Serve hot with chutney or sambar.

Pongal recipe

Pongal is the special preparation prepared during Sankranti. Usually for festivals sweet pongal is prepared.Another variety is prepared for break fast.Sweet pongal preparation already explained.Main ingredients for pongal are rice and green gram dal.We can prepare it with the help of pressure cooker.Here rice and dal should be well cooked.
Required ingredients
Rice:1 cup
Green gram dal:1 cup
Onion(chopped):1
Turmeric powder
Grated coconut:1/2 cup
cumin seeds:1/2 tap
Pepper:1 tsp
Ghee:2 tsp
Salt:to taste

How to prepare pongal

  • Fry green gram dal till you get good aroma.
  • Heat ghee in a pressure cooker.Add cumin seeds.When they splutter add chopped onions and fry till they become transparent.
  • Wash and put rice and dal.Add 5 cups of water.
  • Add salt,powdered pepper and grated coconut and mix well.
  • Add coriander leaves and close the lid.
  • Pressure cook for three signals.Open the lid when the pressure releases by its own.
  • Mix well,Add one spoon of ghee and serve hot.

Sorekai(bottle gourd)halwa recipe

Sorekai or bottle gourd is very good vegetable for all ages.We can prepare a very delicious halwa by using bottle gourd.With minimum ingredients this halwa becomes very tasty,we can keep this for 8-10 days out side refrigerator.Cooking time is also less.For surprise guests or for festivals we can prepare this.Bottle gourd contains more water.After cooking it will reduce almost half.usually for other sweets sweet should be double quantity.Here equal amount is enough.

Required ingredients
Bottle gourd(Grated):4 cups
Jaggery:2 cups
Cardamom powder:1 tsp
Ghee:4 tsp

  • Take grated bottle gourd in a thick pan and heat on low flame.
  • Allow it to cook with its own water .No need of adding any extra water.Once in a while we have to stirr to prevent sticking.
  • Once the vegetable is cooked completely add jaggery and stirr continuously.
  • Add ghee when ever required.
  • Stirr continuously till jaggery absorbs and it becomes a lump and start separating from the sides of pan.
  • Add cardamom powder and mix well.
  • Put off the fire.After cooling transfer the content to air tight container.

Carrot payasa recipe

As we know carrot is the rich source of many nutrients.If you take carrot in any form it is good for your body.We can prepare a delicious healthy payasa with carrots.Here we can use milk or coconut milk according to our taste and convenience.Usually I prefer coconut milk.If you add milk then it s called 'Kheer'.I add jaggery for sweet.For milk jaggery is not matching like coconut milk.We can grate or finely chop carrots.While boiling payasa looks very thin and watery.Once it cools it becomes thick.

Required ingredients
Carrot:6-8
Fresh coconut:1
Jaggery:to taste
Cardamom powder:1 tsp
Ghee:1 tsp
Cashew and raisins
How to prepare carrot payasa

  • Grind grated coconut with sufficient water and extract thick coconut milk.Again add little water and extract thin coconut milk.
  • Wash and grate or chop carrots.Cook them with thin coconut milk till they become soft.
  • When it becomes cool,grind in a mixie.
  • Transfer the content in to a big vessel.Add jaggery and boil it.(If it is too thick we can add water/thin coconut milk).
  • When jaggry completely dissolves add thick coconut milk,cardamom powder and boil it.
  • When you get one to two bubbles put off the fire.
  • Fry cashews and raisins in ghee and pour over payasa.

Vegetable pulav is prepared in many ways.Actually it is very easy preparation.We can prepare it with the help of pressure cooker.If you don't like that method we can prepare with pan.Only thing we should remember is rice should be cooked correctly.We can cook rice separately and then we can add it.Now a days many pulav mixes are available.But you can prepare by your own healthy way.You can crush the masala or directly you can add according to your taste.In pulav rice Will be mixed with almost equal amount of vegetables.So it is good for lunch box,for bachelors. According to me no side dish is required for pulav.If you want you can mix it with cucumber salad or potato salad or any side dish of your choice.According to your taste you can increase the number of spices.According to your taste you can chop vegetables lengthwise or small pieces.

Required ingredients

Basmati rice: 2 cups
Onion:(chopped )1
Carrot(chopped):2
Beans(chopped):10-12
Green peas:1 cup
Cinnamon:1 inch size
Clove:6-8
Cardamom:4 cloves
pepper:10-12 grains
Cumin seeds:1/2 tsp
Coriander leaves
Oil:2 tsp
Ghee:2 tsp
Salt:to taste
How to prepare vegetable pulav

  • In a pressure cooker pan heat oil and ghee.Add cumin seeds.
  • When they splutter add chopped onions and fry till they become transparent.
  • Add chopped vegetables,green peas and fry for 1 minute.
  • Wash and add rice to it.Fry till it becomes white.
  • Add exactly four cups of water ,add salt and stirr till salt dissolves completely.
  • In a small pan heat the masalas till they become warm and make powder of it.
  • Add this powder to pressure cooker and mix well.
  • Add coriander leaves and close the lid.
  • Cook for  two signals and wait to release the pressure.
  • Open the lid ,mix well and serve hot.

Drumstick soup recipe

Drumstick is rich source of iron.It eases constipation.It is good for pregnant woman.Drumstick fruit ,leaves, flowers are useful for recipes..We can prepare sambar,palya,chutney etc.We can chop drumstick leaves and mix with wheat flour while preparing chapati.It is highly nutritious and tasty.Drumstick soup can be prepared with drum stick 0r drumstick leaves.

Green gram dal:2 tsp

  • Fry green gram dal till they turn golden colour.
  • Cut drum sticks in to small pieces.
  • Cook drumstick/leaves with fried dal .
  • Grind them in mixie and filter it.
  • Transfer them to a vessel.Add coconut milk,salt,pepper powder,cumin seeds and boil it.
  • Add coriander leaves and serve hot.

Milk/Coconut milk:25ml(optional)

  • Finely chop carrot and potato.Cook them very soft.(with pressure cooker)
  • Grind them to form smooth paste.
  • Add sufficient water so that it should have the consistency of soup.Add milk/coconut milk,salt,pepper powder and boil it.
  • If you want you can add a pinch of asafoetida to reduce the gas formation due to potato.Add coriander leaves.
  • put off the fire.Add butter and serve hot.

South Indian famous break fast idly recipe

Idly is one of the famous breakfast of South India.It is very light food and low in calorie.Idly usually suits for all age group because of its easy digestible nature.No oil/ghee is used while preparing.It is a steam cooked preparation,so it is good for over weight persons(in limited quantity).No oil/ghee is used while preparing.It will be very soft and served with sambar and chutney.In traditional method black gram dal is used to prepare it.Depending upon the climate it should ferment for 8-12 hours.In traditional method  for one part of rice half part of dal is used to get soft idly.If you use that dal you may get gas formation.With less amount of dal also we can get soft idly.Always use organically grown dal and rice.If it is having outer cover then it is well and good.
In our area  this idly batter will be poured to a special type of container prepared with banana leaf!!After washing banana leaf make it soft by holding on fire.Then roll it round and tie the one end with a small thread.Now the container is ready.If you pour the batter in that and idly is prepared then the idly will have the unique smell of banana leaf and taste will be more than the ordinary idly.Here it is called as 'moote'.One more varity of container is prepared by sewing jack fruit leaves.Idly prepared in these  containers will taste heavenly.For these type of idly rice and dal ratio should be 2:1.

Required ingredients

Rice:3 cups
Black gram dal:1/2 cup
Salt:to taste
Rice flakes(avalakki):1 cup

How to prepare idly


  • Wash and soak rice and dal separately for 3-4 hours.To get better result soak rice in hot water.
  • Grind black gram dal in to smooth paste.It should be thick.
  • Grind rice in to coarse paste by adding sufficient water.It should not be too watery.
  • While grinding rice you can add washed  rice flakes.
  • Mix both batters in a large vessel so that it should not be more than half.(there should be space for fermentation.)
  • Add salt.Here one important thing is while pouring salt if t is floating on the batter means the indication of perfectness.
  • Keep it for fermentation for 8-12 hours.In cold climates keep the batter in warm room/warm place for better result.
  • After fermentation again mix well.Pour them in to idly container.
  • Steam cook for 30-45 minutes.
  • Serve hot with chutney or sambar.

Diet to reduce over weight

Health is wealth.But now a days so many health problems are affecting human beings.One of the major reason for major health problems is over weight.Now a days it is common problem for children as well as adults.Health problems related to over weight are high blood pressure,increased cholesterol,diabetes,arthritis and depression.

Factors or reasons for over weight are-

Hereditary
Hormonal imbalance
Sedentary life style
Stress
And over eating.
Among these reasons over eating is the main reason for over weight.
      Our body requires energy and is measured in calories.Our body weight has direct relation with the amount of calories  that we take as food and the amount of calories we burn in the form of physical activities of day.If our weight remains constant means we are taking same amount of calories that we burn each day.If we starts gaining weight means it is the indication that our calorie intake is more than the number of calorie we burn in our daily activities.
In olden days people used to eat for maintaining good health.They used to follow dinacharya,rutucharya and live long with out any illness.It is clearly explained in Ayurveda that''annat jayate buddhi''.That shows that food has direct role over mind.Sathvik ,rajasik and tamasik three types of food are explained in Ayurveda.Among them sathvik is the best food and tamasa is the rejected food. Now a days what we are using canned foods,frozen foods .junk foods all are tamasa in nature.  Usually we eat for taste and not for good health.We get tempted with high calorie food stuffs like fried items,junk foods etc.These food stuffs are high in fat,sodium and sugar.They does not contain any nutrients our body needs to stay healthy.Excess fat in these food stuffs accumulates in our body and we gain weight and could become obese.More weight we gain more we will be at high risk of serious chronic illness like heart diseases,diabetes,arthritis,fatty liver.High level of sugar  makes our metabolism under stress and pancreas secrets  high amount of insulin to maintain normal blood sugar level.High level of sodium  causes negative effect on renal function  .It may lead to kidney  diseases.

How to reduce weight

Here we have to follow two steps
1.Reduce the number of calorie intake.
2.Increase the number of calorie we burn through physical activity.

1.Always use fresh and organic food stuffs.
2.Drink 2-3 litres of water/ day.
3.Avoid high calorie food stuffs like-non vegetarian food,oil fried,milk products likecurd,butter,cheese.ghee,ice cream,sweet etc.
4.Avoid bakery food .
5.Use plenty of fresh fruits and vegetables.They are low in calorie.They will give the feeling of full stomach.They are rich in fibre and high anti oxidants(vitamin C and E,folic acid,alpha and beta carotene.)These helps to ease constipation, lower cholesterol level and helps to protect body against harmful free radicals.
6.Don't eat full stomach.Fill your stomach half portion with solids,1/4 portion with liquids and leave1/4 portion empty.
7.Immediately after dinner don,t sleep.Give at least2-3 hours gap between dinner and sleep.
8.Replace soft drinks with  butter milk or tender coconut or fresh vegetable soup.
9.Instead of oil fried items use steam cooked foods,oil free dishes like pulkha,rice ball,idly,salads.

Diet chart

Drink one cup of water early morning after brushing teeth.
Drink honey with lemon juice half an hour before break fast.That is for 200 ml of water add 5-10ml of honey and 1 tsp of lemon juice and mix well.

For breakfast

Pulkha/dry chapati-1
Or rice roti:1
or oil free dosa:1
or idly (small):2
   
      +sprouts+ one piece of papaya(or any fruit except banana)

For tea break

Take tender coconut water/buttermilk/herbal tea according to the climate.

For lunch

Rice:1 small cup+2cups of boiled vegetable(with out oil)+rasam+buttermilk OR
Dry chapati/pulkha:1+boiled vegetable/raw salad with sprouts

For evening tea

Herbal tea/coconut water according to climate.

For dinner

Dry chapati/pulkha:1+Boiled vegetable/raw salad+ 1 piece of fruit.

This is just sample.You can change accordingly.Other than this if you take high calorie diet burn it through physical activity.surely you will get result.

Rajma/Kidney beans curry


Rajma/kidney beans curry is a very good combination for chapati/roti/dosa/parata.It is highly nutritious and rich in protein.This preparation originally from Punjab.I prepared it in my own way.Being a Mangalorian I used coconut  pulp instead of tomato puri. Try this.

Required ingredients for Preparing Rajma Curry

Rajma/kidney beans:2 cups
Onions(chopped)1/2 cup
Salt:to taste
Oil:1 tsp
Cumin seeds:1/2 tsp
Grated coconut:1 cup
Pepper :10 grains
Cinnamon:1 inch size
Clove:3-4
Cardamom:1 clove
Tamarind:size of small grape

How to prepare Rajma curry


  • Wash and soak rajma for 2-3 hours.
  • cook them in a pressure cooker or directly till they become soft.
  • Grind grated coconut,with pepper,Cinnamon,cardamom,clove and tamarind to form sooth paste by adding sufficient water.
  • Heat oil in a pan.Add cumin seeds.When they splutter add chopped onions.
  • Fry till they become transparent.
  • Add cooked rajma,coconut mix ,salt and boil it.

Rajma curry is ready.Serve hot.

Aloo paratha

Aloo paratha is one of the popular preparation of India.It can be used for breakfast or lunch or for evening snack.Here potato filling will be kept in between the chapati and rolled and cooked.It is a very tasty preparation.This will be soft and nutritious and ideal for lunch box also.This is one  of the hot favorite of children  and elders too.

Required ingredients

For dough

Wheat flour:2 cups
Water:1 cup
Salt:to taste

For filling

Potatoes:4-5
Onion:1
Oil:1tsp
Mustard seeds:1/2 tsp
Black gram dal:1/2 tsp
Turmeric powder
Pepper powder:1/4 tsp
Ginger:1/2 inch size
Salt
Coriander leaves.

How to prepare aloo paratha


  • Take one cup of warm/hot water in a bowl.Add salt.Add 2 cups of wheat flour and mix it.Knead the mix till it becomes a soft dough so that it should not stick to your fingers.Keep it aside.
  • Cut and cook the potatoes,mash them after removing the peel.
  • chop onions and ginger.
  • Heat oil in a pan.Add mustard seeds,dal.When they splutter add chopped onions.
  • Fry them till they turn transparent.Add mashed potatoes.
  • Add salt,ginger,pepper powder,turmeric powder and mix well.
  • Garnish with coriander leaves and putt of the fire.
  • Make small balls of the size of lemon from the dough.
  • Roll them in to thin circles by dusting with wheat flour.
  • Put 2 spoons of potato fillings in the centre ,bring together all sides in the centre and seal tightly to make a ball.
  • Roll out again  in to a circle with the help of roller by dusting with wheat flour.
  • Cook on pre heated tava.Cook both sides till they turn golden brown.Apply ghee and serve hot with side dish.
  • Repeat with remaining dough and fillings.

Pineapple curry(anaanas menaskai) recipe

Pineapple curry is one of the famous preparation of Costal Karnataka/Mangalore.This will be thicker than the usual sambar.It will be sweet,sour and spicy.But I prefer non spicy.Those who want spicy preparation can increase the number of chilly.Best goes with rice.We can also use it as side dish with chapati.usually sour fruits or vegetables are used to do this preparation.

Required Ingredients

Pine apple(ripened/unripened):1
Grated coconut:1 cup
Black gram dal:1 tsp
Til/sesame seeds:1 tsp
Red chilly:2
Salt:to taste
Jaggery:to taste
 For tempering-oil
mustard seeds
chilly    

How to prepare Pineapple curry(anaanas menaskai)



Cut pineapple in to small cubes after removing the skin.
Cook them by adding salt and jaggery.
In a small pan fry black gram dal and red chilly by adding little oil.
When dal starts turning golden colour add til and fry for few seconds.
Grind fried masala with grated coconut to form smooth paste by adding sufficient water.
Add it to the cooked pineapple.
Boil for few minutes.
heat oil in a small pan.Add mustard seeds and red chilly.
When they splutter pour it over the curry.

Tambittu unde(sweet rice ball) recipe

Tambittu unde is one of the traditional sweet of Costal Karnataka.This is a sweet prepared  with boiled rice and jaggery.This is very sweet and tasty.

Required ingredients

Boiled rice:1 cup
Jaggery:1 cup
Grated coconut(dry){ona kobbari}:1/4 cup
Cardamom powder:1 tsp

How to prepare tambittu unde


  • Wash and dry rice.
  • Fry rice in a thick bottomed pan in low flame till they puff.
  • Make fine powder of the rice.
  • Heat jaggery in a thick bottomed pan,add little water.When it becomes thread like add powdered rice,grated coconut,cardamom powder.Mix well.
  • Make small balls,(by dipping hand in cold water )when it is hot it self.(Once it is cool we may not able to do balls)
  • We can preserve these balls more than 15 days with out preservatives.

Coconut burfi recipe

Coconut burfi is  one of the best sweet prepared with minimum ingredients and minimum time.It is very tasty sweet.Usually it is prepared by using sugar.For all sweets including coconut burfi I use  organic jaggery.

Required ingredients

Grated coconut:2  cups
Jaggery:2 cups
Cardamom powder:1 tsp
Wheat flour:4 tsp
ghee:2 tsp

How to prepare coconut burfi


  • Apply ghee to a plate and keep it aside.
  • Put jaggery in a thick bottomed pan.Add water,heat it.
  • When jaggery completely melts,add grated coconut,cardamom powder,wheat flour and ghee.
  • Stirr continuously without leaving hand till it becomes a lump and starts separating from the sides of pan.
  • Pour it over ghee applied plate.
  • Allow it to cool.Cut in desired shape.
  • Coconut burfi is ready.

Akki payasa(rice payasa/pudding) recipe

Akki or rice payasa is one of the tasty payasa. In our place it is prepared for festivals,an offering to God Shiva.Other than this also we can prepare it as sweet for guests or during functions.Usually people add sugar for sweets.But I am using jaggery.

Required Ingredients

Rice:1 cup(Use good quality of rice like basmathi it gives good smell and taste)
Fresh coconut:1
akki payasa
Jaggery:2 cups
Cardamom powder:1/2 tsp
Cashes,raisins
Ghee:2 tsp

How to prepare akki payasa


  • Grate the coconut,grind it with water to form smooth paste.Now squeeze it through a clean cotton cloth and extract thick coconut milk.
  • Again add water to the coconut and squeeze to get thin coconut milk.
  • Wash and take rice in pressure cooker.Add 3-4 cups of thin coconut milk to it and cook for 3 signals.
  • When the pressure releases, check the rice.It should be over cooked.
  • Add jaggery and boil.While boiling we have to stirr continuously to prevent sticking.
  • Once jaggery completely dissolves add thick coconut milk and cardamom powder.
  • When it stars boiling put off the fire.(one to two bubbles appear).
  • heat ghee in a pan.Add cashews and raisins.
  • When they turn golden colour pour it over the payasa.
  • Akki payasa is ready to serve.
