Kesaribath recipe



FRESH KESARI BATH
Kesari bath is one of the famous sweet prepared by using kesar or saffron.Usually it is prepared by using semolina or rawa.It is a good combination with upma.But kesari bath is also prepared by using rice.Some people add pine apple while preparing Kesari bath.That improves the taste of your sweet.Even with out  pine apple also you can prepare kesari bath.Always use organic sugar for preparing this.Use pure and fresh ghee.Some people add  artificial colour instead of kesar.That is kesari bath with out kesar.This is a rich food with main four ingredients ghee,semolina,sugar and kesar.It is very easy to prepare.Use exactly mentioned amount of ingredients and you will get good kesari bath.Some people add very less amount of ghee and kesari bath is like sweet upma.
Required ingredients
Semolina/Rawa(medium or small):1 cup
Organic sugar:2 cups
Ghee:1 cup
Kesar/ saffron:5-6
Milk:4 tsp
Pine apple:1/2 cup
Cardamom powder:1 tsp
Raisins ,cashews
How to prepare kesari bath
Soak kesar in milk.In a thick bottomed pan fry semolina in low flame by adding 2 tsp of ghee till you get good aroma.Keep it aside.
Take 2-21/2 cups of water in a thick pan and allow it to boil.Add finely chopped pine apple and fried semolina.Close the lid.When the water evaporates both will be get cooked.
Now add sugar,milk with kesar and stirr continuously with out leaving hand.Add ghee when ever required.
Add cardamom powder,raisins,cashews.Stirring should be continued till it becomes a mass and starts separating from the sides of pan.
Put off the fire .Transfer to serving bowl.

Hesaru bele payasa(Greengram dal payasa)recipe

Hesaru bele payasa

Hesaru bele is the Kannada name for greengram dal.Payasa prepared with this dal is one of the favourite of my husband and little kids.Usually we use coconut milk for this.But in some part of South Karnataka only Jaggery is used with dal and this payasa is called as 'Seevu' means sweet.Channa dal and green gram dal payasa are the common payasa prepared for functions in our area.After eating payasa the left out  at the end will be boiled and preseved for the next day and it will be like laddu.Hesaru bele payasa is very tasty,so try this at home.
Required ingredients
Greeen gram dal:1 cup
Grated fresh coconut:1
Jaggery:21/2 cup
Cardamom powder:1 tsp
 How to preparre hesaru bele payasa
In a thick bottomed pan fry green gram dal tillit becomes golden colour and you get good aroma.
Wash and cook them till they become soft.(you can use pressure cooker also)
Grind grated coconut with sufficient water to form smooth paste.Filter it through a clean cloth and extract thick coconut milk.
Again add little water to that coconut and squeeze the thin coconut milk.
Add thin coconut milk to the cooked dal,add jaggery and boil it with continuous stirring to prevent sticking.
Once the jaggery dissolves completely ,Add thick coconut milk and cardamom powder.
When it starts boiling put off he fire.

Sorekai(bottle gourd)halwa recipe

Sorekai or bottle gourd is very good vegetable for all ages.We can prepare a very delicious halwa by using bottle gourd.With minimum ingredients this halwa becomes very tasty,we can keep this for 8-10 days out side refrigerator.Cooking time is also less.For surprise guests or for festivals we can prepare this.Bottle gourd contains more water.After cooking it will reduce almost half.usually for other sweets sweet should be double quantity.Here equal amount is enough.

Required ingredients
Bottle gourd(Grated):4 cups
Jaggery:2 cups
Cardamom powder:1 tsp
Ghee:4 tsp

  • Take grated bottle gourd in a thick pan and heat on low flame.
  • Allow it to cook with its own water .No need of adding any extra water.Once in a while we have to stirr to prevent sticking.
  • Once the vegetable is cooked completely add jaggery and stirr continuously.
  • Add ghee when ever required.
  • Stirr continuously till jaggery absorbs and it becomes a lump and start separating from the sides of pan.
  • Add cardamom powder and mix well.
  • Put off the fire.After cooling transfer the content to air tight container.

Carrot payasa recipe

As we know carrot is the rich source of many nutrients.If you take carrot in any form it is good for your body.We can prepare a delicious healthy payasa with carrots.Here we can use milk or coconut milk according to our taste and convenience.Usually I prefer coconut milk.If you add milk then it s called 'Kheer'.I add jaggery for sweet.For milk jaggery is not matching like coconut milk.We can grate or finely chop carrots.While boiling payasa looks very thin and watery.Once it cools it becomes thick.

Required ingredients
Carrot:6-8
Fresh coconut:1
Jaggery:to taste
Cardamom powder:1 tsp
Ghee:1 tsp
Cashew and raisins
How to prepare carrot payasa

  • Grind grated coconut with sufficient water and extract thick coconut milk.Again add little water and extract thin coconut milk.
  • Wash and grate or chop carrots.Cook them with thin coconut milk till they become soft.
  • When it becomes cool,grind in a mixie.
  • Transfer the content in to a big vessel.Add jaggery and boil it.(If it is too thick we can add water/thin coconut milk).
  • When jaggry completely dissolves add thick coconut milk,cardamom powder and boil it.
  • When you get one to two bubbles put off the fire.
  • Fry cashews and raisins in ghee and pour over payasa.

Tambittu unde(sweet rice ball) recipe

Tambittu unde is one of the traditional sweet of Costal Karnataka.This is a sweet prepared  with boiled rice and jaggery.This is very sweet and tasty.

Required ingredients

Boiled rice:1 cup
Jaggery:1 cup
Grated coconut(dry){ona kobbari}:1/4 cup
Cardamom powder:1 tsp

How to prepare tambittu unde


  • Wash and dry rice.
  • Fry rice in a thick bottomed pan in low flame till they puff.
  • Make fine powder of the rice.
  • Heat jaggery in a thick bottomed pan,add little water.When it becomes thread like add powdered rice,grated coconut,cardamom powder.Mix well.
  • Make small balls,(by dipping hand in cold water )when it is hot it self.(Once it is cool we may not able to do balls)
  • We can preserve these balls more than 15 days with out preservatives.

Coconut burfi recipe

Coconut burfi is  one of the best sweet prepared with minimum ingredients and minimum time.It is very tasty sweet.Usually it is prepared by using sugar.For all sweets including coconut burfi I use  organic jaggery.

Required ingredients

Grated coconut:2  cups
Jaggery:2 cups
Cardamom powder:1 tsp
Wheat flour:4 tsp
ghee:2 tsp

How to prepare coconut burfi


  • Apply ghee to a plate and keep it aside.
  • Put jaggery in a thick bottomed pan.Add water,heat it.
  • When jaggery completely melts,add grated coconut,cardamom powder,wheat flour and ghee.
  • Stirr continuously without leaving hand till it becomes a lump and starts separating from the sides of pan.
  • Pour it over ghee applied plate.
  • Allow it to cool.Cut in desired shape.
  • Coconut burfi is ready.

Akki payasa(rice payasa/pudding) recipe

Akki or rice payasa is one of the tasty payasa. In our place it is prepared for festivals,an offering to God Shiva.Other than this also we can prepare it as sweet for guests or during functions.Usually people add sugar for sweets.But I am using jaggery.

Required Ingredients

Rice:1 cup(Use good quality of rice like basmathi it gives good smell and taste)
Fresh coconut:1
akki payasa
Jaggery:2 cups
Cardamom powder:1/2 tsp
Cashes,raisins
Ghee:2 tsp

How to prepare akki payasa


  • Grate the coconut,grind it with water to form smooth paste.Now squeeze it through a clean cotton cloth and extract thick coconut milk.
  • Again add water to the coconut and squeeze to get thin coconut milk.
  • Wash and take rice in pressure cooker.Add 3-4 cups of thin coconut milk to it and cook for 3 signals.
  • When the pressure releases, check the rice.It should be over cooked.
  • Add jaggery and boil.While boiling we have to stirr continuously to prevent sticking.
  • Once jaggery completely dissolves add thick coconut milk and cardamom powder.
  • When it stars boiling put off the fire.(one to two bubbles appear).
  • heat ghee in a pan.Add cashews and raisins.
  • When they turn golden colour pour it over the payasa.
  • Akki payasa is ready to serve.

Banana(bale hannu) halwa recipe


Banana halwa is one of the best sweet .This will last for few days.This will be little hard like chocolate.You can chew one piece for few minutes.Any ripened banana can be used for this halwa. But' Nendra' which is famous in kerala gives good colour and taste to the halwa.
Required ingredients
Banana halwa
Banana:5-6If it is small variety:10-12
Jaggery:250 grams
Ghee :1/2 cup
Cardamom powder:1/2 tsp
Cashew:8-10
How to prepare banana Halwa

  • Apply ghee to a plate and keep it aside.
  • Peel the bananas and mash them.Heat it in a thick bottomed pan.
  • You have to fry them in lo flame till they are well cooked and turns brown.
  • Once it is cooked add jaggery and stirr continuously with out leaving hand.Add ghee when ever it is sticky.Add cardamom powder and cashews.
  • Stirring should be continued till it forms a hard lump and starts separating from the sides of the pan.
  • Transfer it to pre greased plate and spread it evenly with a spoon.
  • When it is cool cut them in desired shape.

Dates(Kharjoora) payasam


We have discussed sweets prepared out of dates.One more sweet with all good nutrients of dates is Dates payasam.This is also one of easy to prepare sweet.
Required ingredients
Dates:1 cup
Fresh coconut:1
Jaggery:1/2 cup
Raisins And cashews:10-15 each
Cardamom powder:1 tsp
Ghee:2 tsp
How to prepare Dates(Kharjoora) payasam

  • Wash and soak dates for 1/2-1 hour in water after removing seeds.
  • Grind fresh coconut  to form smooth paste by adding sufficient water.Squeeze it through clean cloth and extract thick coconut milk.
  • Add little more water to that coconut and squeeze the thin coconut milk.Keep them separately.
  • Cook soaked dates in thin coconut milk.After cooling grind it.
  • Transfer it to a big vessel.Add jaggery and boil it.Depending upon dates quantity of jaggery varies.Adjust  jaggery according to your taste.
  • Boil till jaggery completely dissolves.
  • Add thick coconut milk and cardamom powder.
  • When it stars boiling that is 1-2 bubbles appear put off the fire.
  • Heat ghee in a pan.fry cashews and raisins and pour it over the payasam.
  • Dates(Karjoor)payasam is ready to serve.

Delicious sweet channa dal payasam(Kadle bele payasa)


Payasam is one of the delicious sweet prepared using jaggery or sugar,coconut milk.Usually payasam is prepared using,vermicelli,milk and sugar.We can prepare payasa with channa dal,greengram dal,fruits like,banana,jack fruit,vegetables like,cucumber,bottle gourd etc .Payasa prepared with jaggery and coconut milk wil lbe healthy and tasty too.
Required ingredients
Channa dal:250 grams
 Jaggery:250 grams
Fresh coconut:1
Cardamomm powder:1tsp

  • Wash and cook channa dal with sufficient water to make it soft.
  • Grind grated coconut with little water and squeeze it through a clean cloth to extract  thick coconut milk.
  • Again add little more water to the coconut and extract thin coconut milk.
  • Now add thin coconut milk and jaggery to the cooked channadal and boil them.
  • When the jaggery is completely dissolved add thick coconut milk and cardamom powder to it.
  • When it starts boiling ie,1 -2bubbles appear put off the fire.
  • Channadal payasam is ready to serve.

Easy steps to prepare sweet pongal for Sankranti


Pongal is prepared on the auspicious occasion of Makara  Sankranti.It is a sweet prepared with rice and green gram dal. It can be prepared any time.But on that day it is offered to Soorya(Sun)Deva.
Required ingredients

Green gram dal:1/2 cup
Rice:1 cup
Jaggery:250 grams
Dry coconut gratings:1/2 cup
Cardamom powder:1 tsp
Ghee:4 tsp
Cashew nut:10
How to prepare sweet Pongal

  • Put green gram dal in a thick pan and fry till it turns light brown.
  • Put 4 cups of water in pressure cooker and heat it.put jaggery in it.
  • Wash fried dal and rice.
  • Add dry coconut gratings,cardamom powder,cashew nut and make it boil.
  • Add fried green gram dal and rice to that boiling mixture and close the lid.
  • Pressure cook for 2 signals.
  • When the cooker is cool remove the lid,pour the ghee over it and mix well.
  • Sweet pongal is ready to serve.

Halubayi


Halubayi
Halubayi is a very healthy and delicious sweet having the consistency of halwa.It is very good for pregnant,lactating woman and small children.Very simple but yummy preparation with 3-4 ingredients.Only drawback is one has to finish it with in 24 hrs.If you keep it n refrigerator then it will last for 2-3 days.For this new year try this special sweet.
Required ingredients for the preparation of Halubayi
White rice:250 grams
Fresh coconut:1
Jaggery:250grms
Cardamom powder:1/2 tsp
Method of preparation
Soak rice for one hour.Grind rice with grated coconut or with coconut milk to form smooth paste.
Apply ghee to plate and keep it aside.
Transfer the content in to a kadai.Add water so that the thickness should be of dosa batter.
Add jaggery and cardamom powder.Heat it on mild flame with continuous stirring.
When it is fully cooked it will start separating from the sides of kadai and forms a lump.(Test of perfectness:the mass will be shining)
Pour it over previously ghee applied plate.Spread it evenly  with a ghee applied spoon so that it should not stick to it.
Wait for 10 minutes to cool.
Now cut with a Knife in desired shape.
Halubayi is ready to eat.

Mango Rasayana


Mangoes are known for their  good taste and deserve the name 'King of fruits'.Mango usually available in summer,chilled  banana rasayana will be good for the hot weather.
Required ingredients for the preparation of mango rasayana
Finely chopped mango pieces    : 2 cups
Fresh coconut                          : 1
Jaggery                                   : 1cup
Cardamom powder                 : 1tsp
Til                                           :2 tsp
Method of preparation of Mango Rasayana

  • Select any good sweet variety of mango like Malika ,Neelam,....
  • Finely chop the mangoes after washing and removing the peel.Transfer them in to a bowl.
  • Add powdered jaggery to the chopped mangoes.
  • Extract Thick and thin coconut milk as explained in Banana Rasayana.
  • Add thick coconut milk to mango mixture.
  • Now slowly add thin coconut milk so that it should not be too thick or too thin.
  • Add cardamom powder.
  • Heat small pan.Put til in it and fry without oil.
  • Transfer them to mango mixture when they start popping.Mix well.
  • Delicious mango Rasayana is ready to serve.Those who want chilled they can keep it in refrigerator before serving.

Simple,delicious,healthy sweet Dates Rasayana

Dates rasayana
Dates Rasayana is one  of the easy sweet but delicious and healthy .Because of its natural sweet taste sweets prepared out of it will be more tasty.Dates Rasayana can be used as Payasam or can be served as side dish for water dosa,iddly and shyavige(noodles).

Required Ingredients for the preparation of Dates Rasayana

Dates:1 cup
Coconut(fresh):1
Jaggery :Optional
Cardamom powder:1 tsp
Method of preparation of Dates Rasayana

  • Soak dates in water for 5-6 hours after removing the seeds
  • Grate the coconut ,grind it with little water ,extract thick coconut milk by squeezing it through a clean cloth.collect it separately.
  • Add little more water to the grounded coconut and squeeze the thin coconut milk.
  • Now grind soaked dates and thin coconut milk.
  • Transfer it to serving bowl.
  • Add thick coconut milk and mix well.
  • Those who want extra sweet can add powdered jaggery and mix well.
  • Add cardamom powder and mix well.
  • Dates rasayana is ready to serve.

Delicious sweet Banana Rasayana

Banana Rasayana  is a sweet having the consistancy of Payasam. Differance is in Rasayana  no boiling.Banana Rasayana can be used with Water dosa,Iddly,Shyavige .etc.

Required ingredients for BananaRasayana



Banana rasayana
Ripened banana-10-15
Fresh coconut  -1
Jaggery            -1/2cup
Cardamom  powder    -1 tsp
Til                          -1 tsp


Method of preparation

  • Chop  bananas in to small pieces after removing the peel.
  • Transfer the chopped bananas in to a bowl.
  • Add powdered jaggery to the banana pieces.
  • Take grated coconut in a blender.Add little water and grind it.
  • Pour the grinded coconut over a clean cloth and squeeze it to collect the thick coconut milk.
  • Add this coconut milk to the banana mixture.Mix well.
  • Again add little water to the grinded coconut  and squeeze the milk.This will be thinner in consistency.
  • Slowly add the thinner coconut milk to banana mix till the consistency of payasam is attained.
  • Add cardamom powder.
  • Fry til in a pan with out oil till they start popping.
  • Sprinkle it over banana mix and mix well.
  • Delicious Banana Rasayana is ready to serve.

Simple Delicious sweet Dates Halwa

Dates Halwa is very delicious and easy to prepare sweet.Dates has rich source of iron.Dates halwa can be prepared on festival occations.
Required Ingredients for Dates Halwa
Dates             _1cup
Milk             _  1cup
Jaggery         _1cup
Ghee            _1/2cup
Cardamom powder_1tsp
Cashew&groundnut small pieces _20-25

Method of Preparation

Fresh dates
Dates halwa
  • Apply ghee to a plate and keep it aside.
  • Remove the seeds from dates and soak in water for 5-6 hours.
  • Grind  dates to make smooth paste.
  • Pour  grinded dates,milk,jaggery in to a thick bottomed pan or kadai & heat on high medium flame stirring without a .break.
  • Add ghee as required while stirring.
  • Continue to stirr the mixture until it starts separating from the sides of the pan and starts forming a lump.
  • Add cardamom powder, cashew and groundnut pieces and stirr well.
  • Transfer the content to previously ghee applied plate,spread evenly with ghee applied spoon.
  • Wait for 15-20 minutes,cut the Halwa in required shape.
  • Separate the pieces only after it is cool.
  • Delicious Dates Halwa is ready to serve.
