Easy steps for healthy cucumber(southekayi) Dosa


Cucumber usually used to prepare salads.If you prepare dosa out of it,you will not forget the  mouth watering good smell and taste.It is also one of the  Dakshina Kannada breakfast dish.This dosa will have all the goodness of cucumber.
Required ingredients
Rice: 1 cup
Cucumber:1
Salt:As per taste
How to prepare cucumber dosa
Cucumber dosa

  • Soak rice for 2-3 hours.
  • Finely chop cucumber.Grind Rice and cucumber together to form a smooth paste.Adding of water is not required because cucumber has water content.
  • Transfer the content in to a bowl.Add water if required,so that the batter should not be too thick or too thin.
  • Add salt.
  • Take one spoon full of batter and pour it over the pre heated tava .spread uniformly to form thin circle.
  • Cook for few seconds by closing the lid.
  • Turn the dosa upside down and cook for few seconds.
  • Slight greenish cucumber dosa is ready.
  • Serve hot with chutney or any side dish.

Spongy vodu dosa.


'Vodu' means earthen in Kannada and Tulu language.Dosa is prepared in a concave shaped earthen vessel or tava. It will be spongy and soft,delicious too. Dosa will be cooked on one side.Because of concave shape centre part of the dosa will be thick and periphery will be thin.Those who don't have the earthen 'vodu' can try with nonstick pan as I did.In non stick pan the dosa will be uniformly thick.Try this vodu dosa and have a wonderful break fast!!!.To improve the taste dip the dosa few minutes in sweet coconut milk.
Required ingredients
Rice:1 cup
Cooked Rice:1/2 cup
Grated coconut:1/2 cup
Salt:as per taste
How to prepare Vodu dosa
cooking vodu dosa in nonstick pan.
Soak rice for 1/2-2 hours.
Grind all the above ingredients with water to form smooth paste.
Add sufficient water so that the batter should be little thick.
Heat tava or vodu,pour one spoonful of batter on the tava.
Cook on one side.
Spongy vodu dosa is ready.
If you want sweet dip them in sweetened coconut milk before serving.

Whole wheat dosa/roti


Wheat grain is popular food in most parts.Chapati,bread are the known preparations out of it.For diabetes patients use of wheat is better than rice.Whole wheat with its natural fibres very good for health.This whole wheat dosa/roti is common break fast dish of Costal Karnataka or Dakshina Kannada.Here very minimum amount of oil is used.
With thick batter if it is prepared it will be little hard and called as Roti,if more water is added then it will be prepared like dosa. According to your choice you can prepare it.
Required ingredients
whole wheat dosa
Whole wheat:2 cups
Ginger:1/2 inch size
Coconut gratings:4 tsp
Salt :as per taste
How to prepare whole wheat dosa/roti
Soak wheat for 1/2 an hour after washing it.
Grind all the above said ingredients in a grinder by adding water to form smooth paste.It is bit difficult to grind whole wheat compared to rice.
Heat tava on high medium flame.
Put little batter on the tava and spread it with a spoon to form thin circle.
Cook both the sides and serve hot with desired side dish like chutney.

Delicious oil free breakfast Akki rotti(Rice roti)


Akki rotti is one of the easy to prepare breakfast .Here with out using oil we are preparing delicious roties.'Akki 'means Rice in Kannada language. Roti will be prepared by using rice flour.
Required ingredients
Rice flour:1 cup
Water:1 cup
Salt:1 tsp
 How to prepare Akki rotti .

Hot n' fresh  roti
  •  Take water in a thick pan.Add salt and heat it.
  • When the water is about to boil add rice flour and stirr continuously till it becomes  a lump and separates from the sides of pan.
  • Wait for few minutes to cool.Make small balls of the size of lemon from that lump.
  • Roll them in to thin circles with a roller or  chapathi press.
  • Cook them one by one on pre heated tava with high medium flame.
  • After cooking one side directly put it on fire on the other side.
  • Now the roti will puff.
  • For beginers it will not puff.No problem!Taste will be good.
  • Puffed roti willbe very soft and smooth with 2 layers.
  • Serve hot with chutney or any side dish of your choice.

Delicious sweet channa dal payasam(Kadle bele payasa)


Payasam is one of the delicious sweet prepared using jaggery or sugar,coconut milk.Usually payasam is prepared using,vermicelli,milk and sugar.We can prepare payasa with channa dal,greengram dal,fruits like,banana,jack fruit,vegetables like,cucumber,bottle gourd etc .Payasa prepared with jaggery and coconut milk wil lbe healthy and tasty too.
Required ingredients
Channa dal:250 grams
 Jaggery:250 grams
Fresh coconut:1
Cardamomm powder:1tsp

  • Wash and cook channa dal with sufficient water to make it soft.
  • Grind grated coconut with little water and squeeze it through a clean cloth to extract  thick coconut milk.
  • Again add little more water to the coconut and extract thin coconut milk.
  • Now add thin coconut milk and jaggery to the cooked channadal and boil them.
  • When the jaggery is completely dissolved add thick coconut milk and cardamom powder to it.
  • When it starts boiling ie,1 -2bubbles appear put off the fire.
  • Channadal payasam is ready to serve.

Banana dosa recipe


Banana dosa is one of the best breakfast for children because of its sweet taste.As we know banana has got many nutrition this dosa will have all the goodness of banana .This dosa will be very soft,even after hours.
Required ingredients
Rice:1 cup
Fenugreek seed:1/4 tsp(optional)
Ripened banana:4-5
Salt:as per taste

  • Soak rice for 2-3 hours.If you want more soft dosa soak fenugeek also along with rice.
  • Grind rice with banana to form smooth paste by adding water.
  • Add salt for taste.
  • If you add fenugreek keep the batter for5-6hrs for fermentation.
  • If the batter is with out fenugreek,then heat tava on mild flame.
  • Apply little oil to the tava.
  • Take one spoon full of batter,spread it evenly to form a circle.
  • Dosa should be little thick.
  • When the dosa turns to golden brown,turn it upside down and cook for few seconds.
  • Serve with ghee and chutney.

Easy steps to prepare sweet pongal for Sankranti


Pongal is prepared on the auspicious occasion of Makara  Sankranti.It is a sweet prepared with rice and green gram dal. It can be prepared any time.But on that day it is offered to Soorya(Sun)Deva.
Required ingredients 
sweet pongal
Green gram dal:1/2 cup
Rice:1 cup
Jaggery:250 grams
Dry coconut gratings:1/2 cup
Cardamom powder:1 tsp
Ghee:4 tsp
Cashew nut:10
How to prepare sweet Pongal

  • Put green gram dal in a thick pan and fry till it turns light brown.
  • Put 4 cups of water in pressure cooker and heat it.put jaggery in it.
  • Wash fried dal and rice.
  • Add dry coconut gratings,cardamom powder,cashew nut and make it boil.
  • Add fried green gram dal and rice to that boiling mixture and close the lid.
  • Pressure cook for 2 signals.
  • When the cooker is cool remove the lid,pour the ghee over it and mix well.
  • Sweet pongal is ready to serve.

Bottle gourd(sorekayi)dosa


Bottle gourd is one of the best vegetable.This vegetable is  good for all age groups especially for old age,pregnant and lactating woman.Because of rich water content it is good for over weight people.It is used in case of hyper acidity.We can prepare many healthy and delicious preparations by using bottle gourd,such as dosa,pudding,sambar,chutney,payasam......Let us discus regarding bottle gourd dosa .Here bottle gourd is grounded.So we can't see bottle gourd.Those who refuses to take bottle gourd ,especially children will like this dosa.
Required ingredients
Rice:1 cup
Bottle gourd pieces:1 cup
Coconut:1 tsp
Coriander:1 tsp
Red chilly:1(optional)
Onion:1/2
Curry leaves:!0-15
Hot sore kayi dosa
Fresh ginger:1/2 inch size
Salt:as per taste
Oil or ghee;2 tsp
How to prepare bottle gourd dosa

  • Soak rice for 2-3 hours
  • Grind rice,finely chopped bottle gourd,coconut,coriander and red chilly to form a smooth paste by adding sufficient water.
  • Transfer the content in to a bowl.
  • Add finely chopped onion,ginger,curry eaves and salt to the mix.Mix well.
  • Heat tava on medium flame.Apply little oil or ghee to tava.
  • Pour the batter on thee heated tava spread evenly with a spoon to form a thin circle.Cover the lid.
  • When the dosa turns to golden brown flip the dosa and put it upside down for few seconds.
  • Remove from the tava,serve hot with ghee and coconut chutney.

Banana stem pudding(bale dindu pathrode)


Pathrode is a special type of pudding very common in Dakshina Kannada.But usually Dakshina Kannada people use colocasia leaves for this pudding.here I am using chopped banana stem instead of colocasia.The advantage is you will get all the benefits of banana stem with a delicious pudding.It can be used as break fast or evening snack.
Required ingredients
Finely chopped banana stem:2 cups
Rice:2 cups
Tamarind:size of peanut
Salt:as per taste
Jaggery:As per taste(optional)
Coriander seeds:2 tsp
Red Chilly:4-5 Or pepper:3 tsp
Turmeric powder:1/4 tsp
How to prepare banana stem pudding

  • Soak rice foe2-3 hours
  • Grind it with all above said ingredients except banana stem to form coarse paste.
  • Mix finely chopped banana stem with the grind ed mixture.
  • Pour it over plantan leaf after making it soft,fold from four sides OR pour it in to a container.
  • Steam cook it for 45 minutes to one hour.
  • Serve hot .

Jack fruit seed is rich in protein,very delicious too.We can prepare  many preparations with it like sambar ,palya.This saanthani is very tasty .In villages people preserve the jack fruit seeds for one year.
Required ingredients
Jack fruit seeds:20-30
Salt:as per taste
Method of preparation

  • After cleaning the jack fruit seeds put them in a vessel.Add water to it.Add salt for taste.
  • Cook them till they become soft.OR cook in a pressure cooker for 2 signals.
  • When it is warm or cool remove the outer cover of the seed and eat it.
  • Once you start eating you cannot stop it.try...
  • If you want to preserve them for many days dry it in sunlight .then you will get crispy  Saanthani.

Kitthale sippe (orange peel )gojju

Orange peel

Kitthale or orange is the rich source of vitamin C.Its peel has cosmetic value.It is used in bathing powder,tooth powder,also as face packs.This gojju is a delicious side dish which suits best with rice.We can preserve this for many days by boiling it after every use.
Required ingredients for the preparation of gojju
Orange peel:1
Jaggery:100 grams
Salt:as per taste
Pepper powder:1/4 tsp
For tempering:Oil:1tsp
Mustard seeds:1tsp
Method of preparation
Finely chop orange peel.Put it in a pan and fry on low flame till they turn to brown colour.
In a vessel take 1/4 litre of water.Add jaggery,salt and pepper in it and boil it.
Add fried orange peel to it and cook till it becomes little thick.Heat oil in a pan.Add mustard seeds.When they are popping pour it over the gojju.

Punarpuli(cocum) saaru


Punarpuli saru
Punarpuli or cocum is one of the best pitta shamaka.It is a natural coolant.It improves appetite.With its red colour it attracts easily.One can preserve cocum peels by drying them in sunlight.They will last for more than a year.This dish suits best with rice.

Required ingredients for the preparation of cocum saaru
cocum(dried or fresh)peel:2-3
Jaggery :75grams
Salt:as per taste
Ginger:1/2 inch
For tempering:ghee;1/2tsp
              Mustard seeds:1/2tsp
              Curry leaves:2-5
Method of preparation
Soak cocum peel in 1/2 litre of water for 1/2 an hour.
Add salt and jaggery and boil it.
While boiling add crushed or finely chopped ginger.
Boil for 5 minutes and put off the fire.
Heat ghee in a pan.Put mustard seeds.when they starts cracking add curry leaves and pour it over the preparation.
Cocum saaru ready.

Halubayi


Halubayi
Halubayi is a very healthy and delicious sweet having the consistency of halwa.It is very good for pregnant,lactating woman and small children.Very simple but yummy preparation with 3-4 ingredients.Only drawback is one has to finish it with in 24 hrs.If you keep it n refrigerator then it will last for 2-3 days.For this new year try this special sweet.
Required ingredients for the preparation of Halubayi
White rice:250 grams
Fresh coconut:1
Jaggery:250grms
Cardamom powder:1/2 tsp
Method of preparation
Soak rice for one hour.Grind rice with grated coconut or with coconut milk to form smooth paste.
Apply ghee to plate and keep it aside.
Transfer the content in to a kadai.Add water so that the thickness should be of dosa batter.
Add jaggery and cardamom powder.Heat it on mild flame with continuous stirring.
When it is fully cooked it will start separating from the sides of kadai and forms a lump.(Test of perfectness:the mass will be shining)
Pour it over previously ghee applied plate.Spread it evenly  with a ghee applied spoon so that it should not stick to it.
Wait for 10 minutes to cool.
Now cut with a Knife in desired shape.
Halubayi is ready to eat.
